Bring a cup of water to low boil.
Add the sugar and dissolve in the water then turn off the heat and add just enough water to cook down the mixture to below 100 degrees.
Add kefir grains to a half gallon mason jar.
Add the sugar water mixture to the jar then fill just below top with filtered water.
Place the lid on loosely and allow to ferment for 24 to 48 hours (may take longer if the kefir grains are new and immature). Grains will start to float when the water is ready for the second ferment.
Pour about 1/4 cup juice of choice into an air tight flip-top bottle.
Use a fine mesh strainer to strain the kefir grains from the fermented liquid into flip top bottle almost to the top.
Close the lid and allow to sit out for another 24-48 hours.
If when you open the lid it pops and sizzles like a carbonated beverage then it’s ready to drink! If not, leave on the counter for another day.
